You can use this guide to do so if you want to, I didn’t have access to this feature either until I did this myself as the UK isn’t a member of the European Union: https://www.xda-developers.com/enable-eea-restricted-features-on-windows-10-11/

Nope, Microsoft never officially allowed Edge to be removed in any region until now with the DMA going into force in the EU (which you can trick Windows into thinking you are based in by editing a JSON file).
